I am a fan of all things pumpkin. Pumpkin bread, pumpkin pie, and pumpkin cookies. These are good pumpkin cookies, but you don't want to skip the glaze, because it really adds to the cookies.
Pumpkin, raisins, and walnuts - these ingredients make me ready for fall already!
Ingredients:
1/2 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 1/2 cups canned pumpkin (not pumpkin pie filling)
1 egg
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1 1/4 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
3/4 cup raisins
1/2 cup chopped walnuts
Powdered sugar glaze:
Combine 1 cup powdered sugar and 2 tablespoons milk in small bowl until well blended.
Preheat oven to 350 degrees. Beat butter and sugars in large bowl until creamy. Beat in pumpkin, egg and vanilla until light and fluffy. Mix in flour, cinnamon, baking powder, baking soda, salt and nutmeg until blended. Stir in raisins and walnuts. Drop heaping tablespoonfuls of dough 2 inches apart onto ungreased cookie sheets.
Bake 12 to 15 minutes or until set (mine took 15). Cool 2 minutes on cookie sheets. Remove to wire racks; cool completely. Drizzle powdered sugar glaze onto cookies. Let glaze set. Makes about 3 1/2 dozen cookies.
